With this spice blend, you'll win every ground meat race: a traditional German ground pork, minced meat, or tartare blend with all the trimmings – except for egg yolk, which you should add fresh to the meat: mix 20 grams of our blend + egg yolk into 250g of ground meat (pork, beef, or mixed), let it rest for 15 minutes, and serve. Serve with mixed bread and plenty of butter. Delicious.
"There are many lovely ground meat blends in German spice racks, but most of them contain exotic spices like cumin, turmeric, or chili. However, such things do not belong in a traditional German blend," says our chef Falk Schettler, "My blend is a family recipe, originates from the Ore Mountains, and tastes well-rounded and strong."
The only modernization of the recipe: Instead of glutamate, we use the organic oriental spice galangal. The chef adds: "Galangal has a flavor-enhancing effect in meat, similar to glutamate, but is completely natural."
Chef's tip: If you like the blend a little more intense, you can add a teaspoon of mustard, diced half an onion, and another half teaspoon of caraway.
We craft all our products by hand with the best organic ingredients. The packaging is partly made from rice paper.
